ok so I'm getting a Mac Pro with two 8800 GT cards and two monitors so i am wondering which setup would give me better performance, hooking up two monitors to one graphics card or hooking up one monitor to each of the graphics cards? Thank you.

Hook up one monitor to each graphic cards.
This way the display load would be balanced and will not make only one video card suffer the loads of two displays.
This also could speed up the processing of images since there are two receivers of the output graphics instead of one.
